As part of Terra Madre Salone del Gusto 2026, the Food Department of the Piedmont Region sets up a bread-making workshop at Piazzetta Reale in Turin together with the Regional Association of Piedmontese Bakers, which bakes traditional Piedmontese bread, pizza and grissini free of charge for the public.1

The 2026 edition, opened by President Mattarella
The 2026 edition of Terra Madre Salone del Gusto opened on 24 September at the Teatro Regio in Turin in the presence of President of the Republic Sergio Mattarella, who returned to the city seven months after his visit for the centenary of the death of Piero Gobetti; the event took place in the historic center through 27 September. At the ceremony, attended by about 120 delegates from around the world and featuring the European anthem sung by the Teatro Regio's children's choir, Slow Food Italia president Barbara Nappini invited delegates to "cultivate diversity" in food, agriculture and natural resources. At the end of the ceremony, Mattarella visited the Slow Food stand in Piazza Castello.
The closing of the 2026 edition (29 September)
Terra Madre 2026, the sixteenth edition of the Salone del Gusto and the first without founder Carlo Petrini, closed in Turin on 29 September after four days spread across squares, buildings, museums and restaurants in the city center, rather than in a single area as in previous editions. The final tally reports about a thousand events, over 600 exhibitors, more than 130 Slow Food Presidia, 1,500 delegates from 120 countries, more than 700 students involved in educational activities and over 600 volunteers involved in the organization; compared with the 2024 edition, the number of delegates halved (from 3,000 to 1,500), while the number of students involved more than doubled (from 300 to over 700). The edition coincides with the fortieth anniversary of Slow Food and the thirtieth of the Salone del Gusto, with the theme "Biodiversity – Be Diversity".
