Raspini

Raspini is a food company founded in 1946 in Turin by Elsa Raspini, née Viotto, starting from a shop in piazza Barcellona, and is best known for its cooked ham (prosciutto cotto). On 15 October 2026 the company celebrated its eightieth anniversary at the Ifse in Piobesi Torinese, telling its story through cooked ham and the tramezzino — the Turin sandwich that turns one hundred the same year — in an evening opened by a talk from Lorenzo Valle on the sandwich's history, attended by chairwoman and CEO Tiziana Raspini. The company has worked for ten years with the Haute Cuisine and Pastry academy at the Ifse in Piobesi Torinese, which also hosts training and food-promotion activities. [1]

80 years of history and the tramezzino for the celebrations (October 2026)

On 15 October 2026 Raspini celebrates 80 years in business at the Ifse in Piobesi Torinese, choosing cooked ham and the tramezzino — which turns one hundred the same year, having been born in Turin — as the evening's connecting theme. [1][2]

Founded in 1946 by Elsa Raspini, née Viotto, with a shop in piazza Barcellona in Turin, the company is now based in Scalenghe; chairwoman and CEO Tiziana Raspini recalls that "Raspini was not born from a plan drawn up at a desk, but from one family's enterprise". [1][2]

For the anniversary, Raspini — which has worked with the Ifse (Italian Food Style Education) in Piobesi Torinese for ten years — is publishing a recipe book on its website from late October 2026 with ten tramezzino recipes, one for each decade of its history. [1][2]
